Decisions, decisions…

This evening the husband and I are going to a wedding for a couple whom I work with.  The bride is a super fab chica.  (I want to steal all her clothes).  I am so excited to see her wedding dress.

I am currently trying to decide what to wear.  Here are my 2 outfit and jewelry choices…

(The bracelet will only be worn if I go with the gold earrings)

I’ve already painted my nails with Essie’s Delicacy (sheer, pale, shimmery pink) and my toes with Splash of Grenadine (opaque pinky-lavender).

I’m off to search for some effortless looking hairstyles.  It’s going to be HOT and HUMID, so I’m going to wear my hair up.  I’m thinking about some sort of low, loose, side-swept bun.

I will be posting pictures of the final outfit choice  (and some of the wedding) on Monday.

Breakfast For Dinner

I love breakfast, and could eat it anytime during the day.  My husband only likes breakfast food at breakfast.  Needless to say, I don’t have breakfast for dinner very often.  Last night the husband had gone to see a band, and my oldest daughter was having a slumber party with Granna, which left just me and the baby.  I find it a bit difficult to cook for just one person.  Usually in this situation I would just have cereal for dinner.  However, I decided to fancy it up a bit…..

I threw 3 pieces of bacon in the oven to get all good and crispy while I cooked the waffles.  The waffles were semi-homemade.  I took 1/2 cup of Jiffy Pancake Mix and mixed in 1/2 cup of milk, cinnamon, vanilla extract, and some fresh blueberries.  Then covered the waffles with some Earth Balance and pure maple syrup.  The bacon also got some syrup for a tasty sweet/savory combo.

This may not have been the most “fit” meal, but it sure was fab!

Run Mama Run

Prior to having baby # 2 I was in a running group with some fab ladies at work.  We had just started running some 5Ks and I went and got preggers.  They kept running while I cheered from the sidelines with my ice cream and pickles.

We’ll now the Scooby gang is back.  We are all planning on running the Asheville Citizen-Times 5k. 

I’m modifying Hal Higdon training plan.  My plan is to do the strength training P90X workouts on the 3 days I don’t run, and have 1 rest day.  My goal is to finish in under 30 minutes. 

Here’s hoping I’ll be ready by Sept 18th.

Date Night

With two little ones it’s not often that my husband and I get to go out alone.  When we do get some free time (big thanks to my parents and the in-laws who are free babysitters), we usually spend it hanging with friends.  However, this past weekend it was just the two of us.

We were feeling like pizza, so first we headed to Brixx which has a wide variety of wood fired pizzas.  We thought we would share, but couldn’t come to an agreement.  However, we did share a ceasar salad.

I decided I would go with the Margarita Pizza.  Yum.

My husband went with the Buffalo Chicken pizza.  It was delicious as well.

After we stuffed ourselves full of pizza, we went to see Inception.  It was AMAZING.  One of the best movies I have seen in a while.  Great action, great plot, and for all you ladies….. great eye candy! (Leo, Cillian Murphy, and some other fellas I didn’t know but who were equally easy on the eyes).  All in all, it was a good night.  Hopefully we can do it again soon.

Busy Saturday

I love lazy Saturdays, but I also love productive ones as well.  So far this morning I have managed to

*  Make homemade (well semi-homemade) blueberry pancakes (Jiffy pancake mix, fresh blueberries, vanilla extract, and cinnamon). AND get the kitchen clean.

* DIY mani/pedi with my oldest daughter.  Mani/pedi for her, just pedi for me at this point.  The mani lasted all of an hour until she went outside to “help” her daddy wash the cars.

*Started attacking the multiple loads of  laundry.  (Not fab, but necessary)

Here’s what I have planned for the rest of the day…

* Workout.  Probably a P90x workout.  I’m thinking Plyo and Ab Ripper

* Fold said laundry

* Dinner and movie with the husband.  We are planning on seeing Inception.

* Hopefully finishing my mani.  (Hey, a girl can dream!)

Summer Treats

With the arrival of summer comes sweet and succulent berries that can be paired with a mix of butter, flour, and sugar to form a delicous cobbler.  I am fortunate enough to have an abundance of blackberry bushes along the road by our house.  This makes for easy picking.  I simply send the husband out the door armed with a bowl.  Over the weekend, the in-laws came over for dinner.  I decided a blackberry cobbler (Paula Dean style) topped with vanilla ice cream would make the perfect after-dinner treat.

Blackberry Cobbler (from The Lady & Sons Savannah Country Cookbook)

1 stick unsalted butter

2 cups sugar

3/4 cup self-rising flour

3/4 cup milk

Preheat over to 350 degrees.  Put butter in a deep baking dish and place in oven to melt.  Meanwhile, in a sauce pan bring 2 cups of blackberries, 1 cup of sugar, and 1 cup of water to a boil.  Simmer for about 10 minutes, stirring often.

Mix remaining 1 cup sugar and flour.  Slowly add milk to prevent lumping.  Pour mixture over the melted butter.  Do not stir!  Spoon fruit and syrup mixture on top.  Do not stir!  Batter will rise to the top during baking.  Bake for 30-45 minutes.

This turned out pretty tasty.  Sorry no picture, it disappeared fast.  I would make a couple of modifications though.  The blackberry syrup was a bit runny.  I would either reduce the water to 1/2 cup or add a  bit of  cornstarch to thicken it up.

We all know that stretching is good for you.  It increases your flexibility and helps to reduce injuries.  Plus it is a great stress reliever.  Who hasn’t felt better after a yoga session?  I will admit it, I AM A BAD STRETCHER.  I definitely don’t stretch long enough pre or post workout unless I am following a workout DVD.  I also sit at a computer for 8 hours a day, so I really need to incorporate more stretching into my daily routine.  I came across this article in the August issue of Real Simple and now I’m off to try the Ultimate Daily Stretch.  Do you need more stretching in your life??
