Garlic Lime Chicken

As a working mom, I love quick and easy weeknight meals.  Here’s one that doesn’t disappoint.

Garlic Lime Chicken

1/2 tsp salt

1/2 tsp pepper

1/8 tsp cayenne pepper (or more if you like)

1/4 tsp paprika

1 tsp garlic powder

1/2 tsp onion powder

1/2 teaspoon thyme

4 boneless skinless chicken breasts

1 tablespoon butter

1 tablespoon olive oil

1/2 cup chicken broth (or white wine)

juice of 1 lime

In a small bowel, mix the first 7 ingredients.  Sprinkle mixture on both sides of chicken breasts.

In a skillet, heat butter and olive oil together over medium high heat.  Saute chicken until golden brown.  Turn down heat and remove chicken (keeping warm).  Add lime juice and chicken broth (or white wine) to the pan, whisking up the browned bits off the bottom.  Keep cooking until the sauce has reduced slightly.  Add the chicken back to the pan to thoroughly coat and serve.  Drizzle the remaining sauce over the chicken. 

Any side-fixing  would work with this dish.  We had it with roasted potatoes and sautéed spinach.  Yum.
